You will need gold or red potatoes, sweet onion and fresh rosemary!
- Chop the potatoes and onion and spread along a baking sheet lined with aluminum foil.
- Lightly Spray with olive oil or coconut oil
- Cut the rosemary into fine pieces and sprinkle over the potatoes. Add pink salt too
- Roast in the oven at 400 degrees for 30-45 minutes or until golden brown. Tossing once halfway through cook time.
Fun fact: You can cut the cook time in HALF (20 min ) by using and air-fryer instead of the oven. Just use the chip/potato setting (400 degrees)
